  • 2 tablespoon(s) ghee
  • 0.25 teaspoon(s) sahjeera
  • 0.25 teaspoon(s) jeera
  • 1 inch cinnamon stick
  • 5 cloves
  • 2 bay leaves
  • 1 teaspoon(s) minced, fresh ginger
  • 2 medium-size potatoes, peeled and cut in 1
  • 1 cup(s) cauliflower florets
  • 1.5 cup(s) basmati rice
  • 1 teaspoon(s) turmeric powder
  • 1.5 tablespoon(s) chili powder
  • 1.5 teaspoon(s) garam masala
  • 0.5 teaspoon(s) salt, or to taste

Aloo Gobhi Pulao Directions

  1. Clean, wash and soak rice in water for at least 15 min. Drain water & keep aside.
  2. Heat ghee in pressure cooker, add shah jeera, regular jeera, cinnamon, cloves and bay leaves. Sauté on med flame for a few second.
  3. Add potato, cauliflower and stir fry on low heat for 5 min.
  4. Add rice, turmeric powder, chili powder, garam masala and salt, sauté on med flame for 2 min.
  5. Add 3 cup hot water, mix well and pressure cook on a high for 2 long whistles.
  6. Open lid by allowing steam to escape by keeping cooker under running water. This does not allow the pulao to over cook.
  7. Serve hot garnished with Cilantro.
